A winter apple salad, featuring a honey mustard vinaigrette.

Have you ever had a Cosmic Crisp apple? Did you know the variety comes from Washington state?

On this edition of PNW Bites, host Jordan Eby brings you a regionally inspired recipe for a winter apple salad.

Ingredients

Salad
2 Cosmic Crisp apples
6 cups mixed greens
5 slices cooked bacon
6 ounces feta cheese
1/3 cup pomegranate seeds
1 cup chopped pecans

Honey Mustard Vinaigrette
¼ cup olive oil
4 tablespoons apple cider vinegar
3 tablespoons honey mustard
4 tablespoons maple syrup
1 teaspoon brown sugar
Salt and pepper

Recipe

1. Slice the Cosmic Crisp apples.

2. Cook slices of bacon on the stove with olive oil. Once cooled, chop into small pieces.

3. Assemble the salad by filling up a large bowl with mixed greens, sliced apples and bacon. Then, add feta cheese, pomegranate seeds and pecans. (Jordan's tip: toast the pecans for an extra nutty flavor.)

4. For the dressing, whisk together olive oil, apple cider vinegar, honey mustard, maple syrup and brown sugar. Add salt and pepper to taste. 

5. Wait until you serve to add the dressing to the salad. Make sure to toss everything thoroughly, and enjoy!
