PNW Bites: Blueberry mocktails

Did you know blueberries were once called "star berries" due to the distinct five-pointed star shape formed when they bloom?

On this edition of PNW Bites, host Jordan Eby brings you a regionally inspired recipe for blueberry mocktails.

Ingredients

1 cup and 1 handful of blueberries
1 cup water
1 ¼ cup granulated sugar
1 lime
3 mint leaves
Ice
Club soda
(Optional: 1 ounce liquor if making a blueberry cocktail)

Note: Makes 2 mocktails

Recipe

1. Start by making a blueberry simple syrup. Whisk together 1 cup of blueberries, water, 1 cup of granulated sugar, fresh lime juice and 2 mint leaves into a saucepan. Put over low heat until sugar dissolves.

2. Increase to medium heat and bring the mixture to a slight boil, stirring often for 15 minutes, or until syrup has thickened. Take off heat and let cool.

3. Grab a shallow plate and pour ¼ cup of sugar onto it. Take the lime used for your simple syrup and rub it on the rim of your glass to make it slightly sticky, then dip your glass rim into the sugar. Let dry for 1 minute.

4. To your sugared glass, add 2 ounces (or 4 tablespoons) of the blueberry simple syrup. Add ice cubes and fill glass with club soda to the top. Stir thoroughly and add a handful of blueberries to the top and garnish with a mint leaf. Enjoy!
